I have once again, recommitted myself to the Keto Lifestyle. I don't do this because I am trying the next crazy diet fad in desperation to lose weight. Rather, I follow the keto diet because I did some biohacking and discovered this is the best eating style for my body.
I have struggled in some areas. I miss certain foods and get tempted to go off track. One of the major foods I have had problems with is my morning coffee. I am a lover of super sweet Starbucks drinks. I struggled for a long time until I found some KETO CREAMER I could love and satistify my cravings. Another food I miss greatly are the crunchy ones such as crackers and chips. Again, I discovered a cracker I could love and a chip that I actually crave now. Yet another area is potatoes. It isn't so much that I love potatoes, my son loves them. So I am cooking potatoes in every way frequently. Let's be honest here, I don't think it is fair that I have to cook him something and not be able to enjoy as well.

So I'm not one to follow the rules, INCLUDING recipes! I cut out half of the seasonings and substitute a lot. Mainly because a lot of the meals I make I make from random things I have in my cabinet. This Lasagna soup was one of those meals. I found a couple cans of different kinds of tomatoes, some turkey in the freezer, and of course, I had my Flavor God to the rescue. I made some delicious Lasagna Soup. It's been getting slightly chilly outside so i figured it might be a great day to get some soup on the table. This dinner is so easy and my granddaughter helped make it too!
A healthier YOU starts with YOU. We cant expect to change the way we look and feel if we aren’t willing to make changes. A great way to heal your body and get into the best, strongest health of your life is to start a healthier diet. The word D.I.E.T. is usually associated with the idea of deprivation and eliminating food groups. That is not what diet means. We all have a diet, it is the way we eat. You can either have a healthy, clean diet or you could have a very unhealthy diet. Adopting a healthy, clean diet is so important. Did you know that the food we eat can heal your body? It is true. The foods we eat can be healing. I am not saying that there is no need for doctors nor am I saying that all illnesses can be treated simply by adapting a healthier lifestyle. BUT, we can heal and cure a lot just by what we put in our bodies. We need to start adapting a diet that fuels your body and not punish it. Ok ok, so that is my soapbox rant for the moment. I started this blog post to share with you a side dish I made for lunch today. Side dishes are sometimes my weakness. It isn’t very hard for me to come up with a clean, healthy, lean protein for a meal but then I usually just get stumped with side dishes. My go to in the past was quick things in a box like rice a roni or past dish etc. Now I am learning a new way to eat. So for today’s lunch I was going to have a veggie burger for my protein but what oh what do we want on the side?? Hmmmm….. This is the point where I start staring into the abyss I call a refrigerator. I noticed I had a cucumber and a roma tomato. Thus a Cucumber Salad was born. This recipe is so simple and quick you will wonder why you were not making this all along. I am all about quick fix meals. My life seems to always be on the go, never knowing what will happen in the next five minutes. This crazy, on the go, always changing lifestyle makes it hard to stick to a "diet" or to lose weight. Finally, I realized I had to find a way to eat food I really enjoyed, that was healthy AND that was quick. I needed real food for a real lifestyle. Just in the last two weeks, I have dialed in on my healthy nutrition, eating fast cook meals and have lost 3.6 pounds. Woot woot!! Ok, ok, back to my post about quick, healthy meals. In my need for things quick, I threw together and created this Healthy, Gut Healing Recipe that can be made in 10 minutes or less. Continue reading for the entire recipe.......
