So I'm not one to follow the rules, INCLUDING recipes! I cut out half of the seasonings and substitute a lot. Mainly because a lot of the meals I make I make from random things I have in my cabinet. This Lasagna soup was one of those meals. I found a couple cans of different kinds of tomatoes, some turkey in the freezer, and of course, I had my Flavor God to the rescue. I made some delicious Lasagna Soup. It's been getting slightly chilly outside so i figured it might be a great day to get some soup on the table. This dinner is so easy and my granddaughter helped make it too!

First you are going to take your pound of ground turkey (or beef) and thaw it out. While that is thawing out in the sink you are going to cut a yellow onion in half and chop up one half. Place the chopped onions in a large stew pot along with the thawed ground turkey. Cook this yumminess up till it is cooked thoroughly. In a saucepan boil 4 cups of water as it starts boiling add in your four cubes of chicken bouillon. As your turkey finishes cooking, you will add the chicken broth you made to the large pot with the turkey. Add all of your other ingredients to the pot excluding the cheese and break each lasagna noodle into smaller piece. This is where the kiddos can help. Mix everything well and let cooked uncovered for 10 minutes. Mix every once in awhile. After it has been cooking for 10 minutes add in cheese and mix together. If the mixture looks a little thick to you, you can add in some water. Only add in ¼ cup at a time so it doesn't become too thin.

As I said above, I love to substitute things to adhere to what i have in my cabinets so I added some options and substitution in the ingredient list. What a great time a year for some soup and who doesn't love lasagna?? Oh btw, you can easily make this in a crock pot too :) Just add all ingredients including cooked turkey in the crock pot and place on low for 6 hours!  ENJOY!
